Pour a cup of classic Sumatra beside a bright, floral East African coffee and the contrast can be startling. Where one sparkles with citrus and jasmine, the other rumbles — low, earthy and heavy in the mouth, tasting of cedar, damp forest floor, dark chocolate and something almost savory. That gap is not really about the variety, or even the mountain the coffee grew on. It comes down to how the coffee was handled after picking, and to one method that exists almost nowhere else on earth: wet-hulling, known throughout Indonesia as giling basah. Understand giling basah and you understand why Indonesian coffee tastes the way it does.
What "Giling Basah" Actually Means
Giling basah is Indonesian for something close to "wet grinding" or "wet milling," and in English it is usually called wet-hulling. The name points to the single step that sets it apart from every other approach to preparing green coffee. In most of the coffee world, the parchment — the papery husk wrapped around each green seed — stays in place until the bean is completely dry, shielding it like armor. In giling basah, that husk is peeled away while the bean is still soft and damp, roughly halfway through drying. Nearly everything distinctive about Indonesian coffee flows from that one decision. The Wet-Hulled Method, Step by Step
On paper the sequence looks familiar; the twist is the timing of one step in the middle.
- Picking and pulping. A smallholder picks ripe cherry and runs it through a small, often hand-cranked pulper that scrapes off the outer skin, leaving the seed coated in sticky mucilage.
- A short fermentation. The pulped coffee rests — commonly overnight, often around twelve hours — in a bucket, sack or tank so that the clinging fruit layer begins to break down.
- Washing and a partial dry. The beans are rinsed and spread on patios, tarps or raised beds, but only briefly. Rather than drying all the way down, the parchment is taken to roughly 30–40% moisture — still visibly wet.
- Wet-hulling. At around 30–35% moisture the damp parchment is fed through a huller that strips it off, exposing the naked green seed. Frequently this happens only after the parchment has changed hands, sold by the farmer to a village collector or agent who consolidates lots.
- Finish drying. The bare, exposed bean dries the rest of the way in the open air, shrinking and hardening until it reaches the roughly 12% moisture needed for export.

Why Indonesia — Climate and Economics
Wet-hulling did not appear because it makes the "best" coffee by any textbook standard. It appeared because it suited the place. Much of Indonesia's coffee grows on humid, mountainous, rain-prone islands where fully drying parchment can drag on for weeks and invite mold. Stripping the parchment early exposes more of the seed to the air, so the bean dries far faster and the farmer clears the risky wet stage sooner.
Economics push in the same direction. The crop is overwhelmingly grown by smallholders on small plots, many with little storage, drying space or spare cash. Selling semi-dry parchment to a collector after a day or two — rather than babysitting it for weeks — turns the harvest into money quickly and spreads the work across many hands. The result is a famously fragmented, multi-stage supply chain in which a single export lot may pass through several people before it is hulled and finished.
The Signature Bluish-Green Bean
Because the seed spends its final drying naked and swells and hardens unevenly, giling basah green coffee looks like nothing else. Instead of the pale, even jade of a washed bean, it takes on a deep, dull blue-green or opal cast, often swollen, irregular and slightly cracked — some describe the shape as a "hippo ear" or a footprint. The color comes from the wet, exposed bean oxidizing in open air, not from any additive. Experienced buyers can pick an Indonesian wet-hulled green out of a lineup on sight.
What Wet-Hulling Does to the Cup
Hulling wet does two big things to flavor: it pushes the body up and pulls the acidity down. The cup turns heavy and syrupy, with the brightness that defines many washed coffees largely muted. In its place come the flavors people either love or love to argue about — cedar and old wood, damp earth and forest floor, tobacco, dark chocolate, warm spice and a savory, sometimes herbal edge. It is a low-toned, rumbling profile rather than a sparkling one.

Why this happens is still partly debated, but the leading explanation is exposure. Removing the parchment while the bean is soft and wet lets oxygen and microbes reach the seed during a stretch of drying that, in other methods, stays sealed under a husk. That extra activity seems to break down some of the acids and green, grassy compounds that lend washed coffees their brightness, while building the dense, mouth-coating heft that reads as body. The humid drying environment only deepens the effect.

Wet-hulling is the default across Indonesia's best-known growing islands. The Trade-Offs
Removing the parchment early is efficient, but it comes at a cost. That husk normally acts as a protective shell, and taking it off while the bean is soft leaves the seed exposed to physical damage in the huller and to mold and other microbes during the final dry. Combined with a supply chain that passes coffee through many hands, this makes defects — off notes, unevenness, the occasional musty cup — more common than in tightly controlled washed lots. Traceability and consistency are harder to guarantee.
None of that has dimmed the method's appeal. The very heaviness and earthiness that make wet-hulled coffee polarizing are exactly what its fans want, and a well-made example is clean, deep and satisfying rather than muddy. A growing number of producers now experiment with longer or anaerobic fermentations, cleaner drying and tighter collecting to keep the classic character while lifting quality.
Roasting and Brewing Notes
The dense, unevenly shaped, blue-green beans behave differently under heat, and roasters often lean a little darker to play up the chocolate and spice while managing the low acidity. That heavy body and gentle acidity make wet-hulled coffees a longtime favorite for espresso and for blends that want backbone. Brewed at home, methods that celebrate mouthfeel — a French press, a moka pot, a full-immersion steep — tend to flatter the style more than a bright, delicate pour-over would.
