Few coffee varieties provoke the reaction Pacamara does. Pour a well-grown, high-altitude lot and jasmine, tropical fruit, and green herbs may crowd the cup all at once, a flavor so loud and unruly it can feel like the coffee is showing off. Then there are the beans themselves: enormous, among the largest in the Arabica world, so big they jam ordinary sorting screens. Pacamara is not a happy accident but a deliberate human invention, crossed in El Salvador from two remarkable parents, and it carries both the brilliance and the burden of a designed thing. It is a Cup of Excellence favorite and a grower's headache in equal measure. This is the story of how it was made, why it tastes the way it does, and why it is so hard to keep true.
A variety made on purpose in El Salvador
Most of the varieties in your cup are accidents. A spontaneous mutation appears on a single tree, a sharp-eyed farmer notices it, and the plant is propagated. Pacamara is different. It was bred deliberately by the Salvadoran Institute for Coffee Research (ISIC), which began the crossing work around 1958 with a clear brief: marry the cup quality and compact, productive frame of the local Pacas variety to the spectacular bean size of Maragogipe. The name is a portmanteau, stitched together from the first syllables of the two parents.
Breeding a coffee variety is slow, patient work. Each generation takes years to fruit and be evaluated, and a cross has to be selected over many cycles before its traits settle. Pacamara took decades of that painstaking selection, and it was released to Salvadoran producers step by step through the late 1970s and the 1980s. It remains, more than any other variety, the signature coffee of El Salvador, even as it has since spread across Central America and into other origins hunting for competition-grade lots.
Meet the parents: Pacas and Maragogipe
To understand Pacamara you have to understand the unlikely pair it descends from, because it inherited very different gifts from each.
Pacas is a natural dwarf mutation of Bourbon, discovered in 1949 on the farm of the Pacas family in El Salvador, from whom it takes its name. Like other Bourbon dwarfs, it has tight internodes and dense, compact foliage that make it hardy in wind and sun, productive, and easy to pick. In this respect it is a close cousin of Caturra, the Brazilian Bourbon mutation that reshaped coffee farming across Latin America. Pacas gave Pacamara its short stature, its yield, and much of its cup potential.
The other parent could hardly be more different. Maragogipe is a natural mutation of Typica, first found around 1870 near the town of Maragogipe in Bahia, Brazil. It is famous for one thing above all: outsized beans so large the variety earned the nickname "elephant bean." On its own Maragogipe is a tall, sprawling, low-yielding tree with a cup that is often merely pleasant, but its genetics carry that dramatic bean size. ISIC's wager was that a cross could keep the giant seeds without the disappointing yield and mild flavor.

Those enormous beans
The first thing anyone notices about Pacamara is the raw green coffee. The seeds are genuinely huge, inherited wholesale from the Maragogipe side, and they refuse to behave like ordinary beans. On a sorting line they often sail over the top of standard screens, which forces producers to grade Pacamara separately. That size is a marketing asset, and it looks impressive in the bag, but it complicates the work behind the scenes.
Big beans also roast differently. A large, sometimes irregularly shaped and less dense seed heats less evenly than a small, tight one, so roasters tend to slow down and lengthen their approach to keep the outside from racing ahead of the core. Get it wrong and Pacamara turns grassy and underdeveloped or flat and baked; get it right and the size becomes an advantage, giving the cup a heavy, syrupy body to carry all that aroma.
What Pacamara actually tastes like
When it is grown well at altitude and processed cleanly, Pacamara is one of the most distinctive cups in coffee. The flavors run high-toned and aromatic: jasmine and other florals, tropical and stone fruit, bright citrus, red berries, and a persistent green, herbal streak that some tasters read as basil, mint, or tomato leaf. Beneath the fireworks sits a dense, creamy, almost syrupy body, and at gentler roasts that base can turn toward butterscotch, cinnamon, and chocolate.
It is also a divisive variety. Handled beautifully, Pacamara is layered and thrilling. Handled carelessly, those same herbal and savory notes can tip into something vegetal or oniony that drinkers either adore or actively dislike. Processing amplifies everything: a clean washed lot showcases the florals and acidity, while honey and natural approaches push the fruit and syrupy sweetness even further, sometimes to wild, ferment-forward extremes. That range is exactly why it has become a canvas for producers experimenting at the top of specialty coffee.
The genetic instability problem
Here is the catch that keeps Pacamara from being a simple success story. It is not a fully stabilized variety. Because it is a relatively recent cross of two genetically distinct parents, its offspring are not homogeneous the way a long-settled variety's are: plant to plant, and generation to generation, trees can differ noticeably in growth, bean size, and cup character. A meaningful share of seedlings, often cited at roughly 10 to 12 percent, revert toward the Pacas parent, losing the giant beans that are the whole point.
For a farmer this is a real cost. Seed has to be sourced carefully and selected rigorously, off-type trees have to be culled, and even then a single farm's Pacamara can vary from one harvest to the next. Two lots labeled Pacamara from neighboring plots may not taste alike. It is the price of a young, deliberately engineered variety that has not yet had the many decades of selection it would need to breed truly consistently.
Difficult, and worth it, to grow
Instability is only part of the challenge. Agronomically, Pacamara is demanding. It is highly susceptible to coffee leaf rust, the fungal disease that has repeatedly devastated Central American harvests, and it is also vulnerable to ojo de gallo (American leaf spot), which thrives in the cool, humid, high-altitude conditions where Pacamara does its best cupping. In other words, the environment that produces its finest flavors is also the one where disease pressure is highest.
The variety is compact and reasonably productive for its class, and it comes in both red-fruited and yellow-fruited forms, with the red types generally regarded as the stronger yielders. But it cannot match the raw output or disease resistance of modern rust-tolerant hybrids, and it rewards attentive management: good shade, careful nutrition, selective picking of its large cherries, and vigilant disease control. Farmers keep planting it anyway, because a standout Pacamara can command the recognition that makes the extra labor worthwhile.
A Cup of Excellence darling
Nowhere is Pacamara's reputation clearer than in competition. It has been a fixture near the top of Cup of Excellence auctions for years, particularly in El Salvador but also in Guatemala, Honduras, and Nicaragua, where roasters have chased the same electric profile. Judges reward exactly what Pacamara does best: intense, unusual aromatics, clarity, and a memorable, one-of-a-kind character that stands out in a blind flight of otherwise excellent coffees. Standout Pacamara lots regularly post scores well above 90 points and can sweep entire tables in a strong field.
That competitive pedigree explains why a variety so hard to grow and so unpredictable in the field refuses to disappear.
