Long before mechanical dryers and African raised beds became common on coffee farms, growers spread their harvest on the ground and let the sun do the work. That method — laying coffee across a large, flat, open floor to dry in the open air — is still the backbone of post-harvest processing across much of the coffee world, from the sprawling terreiros of Brazil to smallholder yards in Central America, East Africa and Asia. It is cheap, it scales, and in the hands of a skilled mill it produces clean, evenly dried coffee. Done carelessly, it produces defects.

What patio drying is
Patio drying is the practice of sun-drying coffee spread in thin layers on a large, hard-surfaced open floor. The classic surface is a poured concrete or cement slab, but brick, ceramic tile, stone and even smooth packed earth or asphalt are all used, and each behaves a little differently. In Brazil the drying yard is called a terreiro, and vast estate terreiros can cover hectares. On smaller farms the “patio” may simply be the concrete apron outside the wet mill or a rooftop.
Whatever the material, the principle is the same. Wet coffee — which can arrive at the yard around 45–55% moisture — is raked out into a shallow bed a few centimetres deep and exposed to direct sun and moving air. Because the layer is thin, sunlight and wind reach a large share of the beans at once, and the moisture that evaporates from the surface is carried away rather than trapped. The floor itself matters: a dark concrete or asphalt slab absorbs heat and radiates it upward, which speeds drying but also raises the risk of overheating on the hottest afternoons.
This step comes after the fruit has been prepared by one of the standard coffee processing methods. Whether the coffee reaches the patio as washed parchment, as whole dried cherry, or as sticky pulped-natural beans changes how it is handled, but the drying floor is the shared final stage that stabilises all of them.
How coffee is dried on the patio
Drying on a patio is an active, hands-on job, not a matter of leaving coffee in the sun and walking away. The coffee is spread out early in the morning once the dew has lifted and raked into an even layer, typically a couple of centimetres thick so no beans sit permanently in shade beneath others. Through the day, workers pass over the bed again and again with wooden rakes or push-boards — traditionally every hour or two — turning the coffee from top to bottom so that every bean rotates through the sun and no clumps stay damp long enough to ferment or grow mould. On large estates this raking is sometimes mechanised with adapted vehicles, but the goal is unchanged: uniform exposure.
Two protective habits define good patio work. First, the coffee is piled up and covered whenever conditions turn against it — heaped into windrows and sheeted over at night to keep off dew and the cool damp air, and covered quickly before rain. Second, the coffee is never sealed away while still warm and wet, because a covered pile that is too moist will sweat, reabsorb water and spoil. Managing that daily rhythm of spread, rake, pile and cover is the whole craft.
The endpoint is the same one every drying method targets: roughly 10–12% moisture, with about 11% a common bullseye. Below that the beans risk becoming brittle and can lose the protective parchment integrity that keeps them stable; much above it and they remain vulnerable to mould, staling and rapid quality loss in the sack. What gets dried this way
Patio drying is method-agnostic. The same floor handles very different lots, though the timeline and the level of vigilance change:
- Washed parchment: beans still in their parchment shell after fermentation and washing. The surface is relatively clean and dries fairly fast — often on the order of a week in good sun — which is why washed coffee on thin layers over concrete is frequently cited as giving the most even, predictable results.
- Naturals (dried in the cherry): whole fruit dried intact, skin, pulp and all. Because the water has to escape through the whole cherry, naturals dry far more slowly — commonly two weeks or more — and demand more turning to stop the fruit from sticking, fermenting unevenly or developing mould.
- Pulped-natural and honey lots: beans with some or all of the sticky mucilage left on. These sit between the two extremes, and the tacky surface makes early, frequent raking essential so beans do not glue together into clumps.
In every case the floor is doing the same job — reducing moisture to a shelf-stable level — but the wetter and more intact the coffee, the longer it lingers on the patio and the more it depends on attentive management.
The advantages and risks of patio drying
The appeal of patio drying is straightforward. It is low cost: once the slab is poured there is little to buy and no fuel to burn, so the running expense is mostly labour and sunshine. It offers large capacity, letting an estate lay out an entire day's harvest at once, which matters enormously at peak picking. In a reliably sunny, dry-harvest climate it is gentle and effective, drying coffee slowly enough to preserve flavour when the bed is kept thin and turned often. That combination of scale and economy is why it remains the dominant method in big producing origins.
The risks are the flip side of those same traits. Because the coffee sits on an open floor, patio drying is exposed to several failure modes:
- Uneven drying: beds that are too deep, turned too seldom, or dried on a floor with poor sun exposure leave some beans wetter than others, which shows up later as inconsistent roasting and cup faults.
- Moisture re-absorption: coffee left out through dew, covered while still damp, or caught by an afternoon shower can pull water back in, undoing progress and inviting spoilage.
- Contamination: a ground-level surface collects dust, grit, animal traffic and pests, and coffee dried on bare earth in particular can pick up earthy or “grounds” taints.
- Mould and fermentation defects: rain on an uncovered bed, or wet coffee piled deep, breeds mould and off-fermentation — among the most damaging and hard-to-hide defects in green coffee.
- Cracking from over-fast drying: on a hot, dark, bare concrete or asphalt slab under strong midday sun, the surface can drive moisture out too quickly, stressing and fissuring the beans and leaving brittle, faded coffee.

Patio drying versus raised beds and mechanical drying
Patio drying is one of three broad options, and most farms understand it best by contrast with the other two. The main practical difference from raised-bed (African bed) drying is airflow: on a bed, air moves underneath the coffee as well as over it, which speeds and evens drying and keeps the crop up off the dirty ground, at the cost of far less capacity per unit area and more infrastructure to build and maintain. A patio wins on sheer volume and cost per kilo; a raised bed often wins on gentleness and cleanliness, which is why many specialty naturals are dried on beds.
Mechanical drying — rotating drums or column driers heated by hot air — sits at the other end. It is fast, weather-proof and controllable, indispensable in humid, cloudy or high-rainfall origins where the sun simply cannot finish the job, but it burns fuel, costs more and, if run too hot, can bake or “cook” the coffee.
The three are not mutually exclusive, and the most common real-world pattern is a hybrid. Farms frequently use the patio to pre-dry coffee down to the risky mid-range — often somewhere around 15–20% moisture — while the sun does the cheap early work, then move it into a mechanical drier to bring it gently to the final target without leaving it exposed to overnight damp and unpredictable weather.
