Raised bed drying suspends coffee on mesh or shade-net tables set on trestles roughly a metre above the ground, so air moves both over and beneath the layer of parchment or cherry. That airflow underneath is the whole point: it dries beans more evenly than a solid patio, keeps them off damp, contaminated soil, and lets producers spread thin, rakeable layers that give the fine control specialty coffee prizes. First made famous on the "African beds" of Ethiopia and Kenya, the method is now used worldwide for washed parchment, honeys and naturals alike.

What a raised bed actually is

A raised bed — often called an African bed or a raised drying table — is a simple wooden or bamboo frame, typically a metre or so tall, with a taut deck of woven mesh, hessian or shade netting stretched across the top. Coffee is spread on this permeable surface rather than on concrete, brick or bare earth. Beds are usually a couple of metres wide, narrow enough to reach the middle for raking, and can run many metres long, arranged in rows across a drying yard or under a simple open-sided roof.

The permeable deck is what separates a raised bed from a patio. Because the surface is open, warm air passes through the mesh from below as well as sweeping across the top. Moisture leaving the beans is carried away from both faces of the layer instead of being trapped against a solid slab, which is why raised beds are so strongly associated with clean, even, well-modulated drying.

Why raised beds often beat patio and ground drying

Three advantages come up repeatedly:

  • Airflow underneath. With air circulating on both sides, the top and bottom of the layer lose moisture at similar rates. On a solid patio the beans touching the ground stay wetter and warmer, so the batch dries unevenly unless it is turned constantly.
  • Off the ground. Bare-earth and even patio drying expose coffee to soil splash, dust, foot traffic, animals and ground moisture that wicks back into the beans overnight. Lifting the coffee a metre up reduces contamination, cuts the risk of mould and off-flavours, and limits re-wetting.
  • Thin, controllable layers. Because the surface breathes, producers can spread a shallow layer and still dry it evenly. Thin layers rake easily, respond quickly to weather, and let the drying curve be slowed deliberately — the gentle, even drying that protects delicate cup character.

Ground drying is the cheapest option but the riskiest for quality and food safety. Patios sit in the middle: durable, high-capacity and good for large washed lots, but prone to uneven drying and heat spikes where sun-baked concrete radiates warmth into the beans. Raised beds trade some capacity and durability for cleanliness and control, which is why they dominate quality-focused washing stations.

How to dry coffee on raised beds, step by step

Prepare and load the beds

Clean the mesh between batches so old skins and debris do not taint the new lot. For washed coffee, parchment goes onto the beds still wet from the final wash and, ideally, after skin-drying or a short spell of higher airflow to shed surface water. For naturals and honeys the whole cherry or mucilage-coated parchment is loaded directly, which demands even more attention because the sugary fruit dries slowly and can ferment or mould if it sits wet and thick.

Spread thin, even layers

Layer depth is the single biggest lever. Washed parchment is commonly started around two to four centimetres deep, sometimes thinner in the first day when moisture is highest, then allowed to build slightly as the coffee stabilises. Naturals are often spread even more thinly at first and thickened later, because the intact fruit holds so much water. An even surface — no mounds, no bare patches — is essential; thick spots dry slowly and can spoil while thin spots race ahead.

Rake and turn regularly

Rake or hand-turn the coffee several times a day, roughly every hour or two during peak sun in the early stages. Turning brings damp beans from the bottom to the surface, breaks up clumps, exposes every bean evenly, and prevents a crust forming on top. Consistent raking is what turns "drying on a bed" into genuinely even drying; neglecting it undoes much of the bed's advantage.

Cover at night and in rain

Cover the beds each evening and whenever rain threatens. Overnight, cool humid air and dew can push moisture back into the coffee — the re-wetting that raised beds are meant to limit — so a plastic or tarpaulin cover, or moving trays under shelter, keeps the drying curve heading one direction. In humid or rainy climates producers often build the beds under a clear roof or polytunnel so the coffee is protected while still bathed in moving air. Avoid sealing warm, wet coffee airtight, though, as trapped moisture and heat invite mould.

Slow and even wins

Fast, harsh drying in fierce midday sun can case-harden the outside while the centre stays wet, and can strip volatile aromatics. Many quality-focused stations deliberately slow the process — shading the beds during the hottest hours, or drying under net — so moisture leaves gradually and uniformly. Depending on climate, altitude and process, bed drying commonly takes anywhere from about one to three weeks, with naturals usually the slowest.

The target: 10–12% moisture and water activity

The goal is to bring coffee down to roughly 10–12% moisture, most often cited around 10.5–12% for green coffee headed to storage and export. Dry too far below this and beans become brittle, fade faster and lose weight the seller is paid for; leave them too wet, above about 12.5%, and they are prone to mould, rapid staling and rejection at grading. Producers track progress with a moisture meter and, increasingly, by feel and appearance as the parchment loosens.

Moisture percentage alone does not tell the whole story. Water activity — the amount of unbound, biologically available water, measured on a 0-to-1 scale — is the better predictor of microbial and mould risk. Green coffee is generally considered stable and safe for storage around a water activity of roughly 0.55 to 0.65. Two lots can read the same moisture percentage yet differ in water activity if one dried too fast and unevenly, which is another argument for the gentle, uniform drying raised beds encourage. Even, slow drying tends to give a more homogeneous, lower water activity across the batch.

After the beds, coffee usually rests in its parchment for a period of conditioning before hulling, which lets moisture equalise between the drier and wetter beans. Getting drying and resting right is the foundation of good green coffee storage: a well-dried, stable lot holds its quality for months, while an under- or unevenly dried one can degrade before it ever reaches a roaster.

In practice the three are often combined. A washing station may skin-dry washed parchment on raised beds for cleanliness and even early drying, then finish borderline-wet lots in a guardiola when rain sets in, while a large commercial estate leans on patios and mechanical dryers for volume. Raised beds are the method most consistently reached for when the priority is a clean, transparent, high-scoring cup rather than sheer throughput.

Where the method comes from

The technique is most closely tied to East Africa. Ethiopia and Kenya popularised the low mesh tables that gave "African beds" their name, and Rwanda, Burundi and other origins across the region built their specialty reputations on them. From there the idea spread: producers in Latin America, Asia and beyond now use raised beds — sometimes as full-scale drying yards, sometimes as smaller tables for experimental micro-lots, honeys and naturals — wherever growers want the cleanliness and control the design provides.
