The freshly dried coffee is not rushed to the huller or the shipping container. Instead it is banked in ventilated wooden bins, bagged and stacked in a cool warehouse, or piped into tall silos, and left largely alone for weeks. This resting stage is called conditioning — known across much of Latin America as reposo, literally "rest" — and it is one of the least visible but most consequential steps in turning a dried crop into stable, exportable green coffee.

Conditioning matters because drying is never perfectly uniform. The sequence, simplified, looks like this:

  1. Harvest and processing, where the wet or dry mill removes fruit and mucilage as the method requires.
  2. Drying to a stable target moisture, whether on patios, raised beds, or with mechanical driers.

  4. Hulling to remove the parchment, then grading, sorting, and bagging as green coffee.

Why resting parchment stabilizes moisture and water activity

Drying pulls water out of coffee from the outside in. Even when a lot reads a satisfactory average moisture content on a meter, that average hides two kinds of unevenness:

  • Between beans. A patio or drier holds thousands of beans that dried at slightly different rates — larger, denser, or more shaded beans lag behind smaller ones. Some end up drier than the target, some are still a little wet.
  • Within each bean. The surface of a bean gives up water faster than its core, so a freshly dried bean can be dry on the outside while its center still holds more moisture. This is a moisture gradient, and it leaves the bean under internal stress.

Wrapped in its parchment and left to rest, the coffee lets these gradients relax. Moisture migrates from wetter beans and wetter bean-cores toward drier ones until the lot approaches a uniform equilibrium. Crucially, this also settles water activity — the measure of how much of a bean's water is chemically "free" and available, as opposed to bound up in the bean's structure. Because denser, more chemically complex beans hold their moisture more stubbornly, they tend to need longer to settle — one reason high-grown specialty lots are often rested toward the upper end of the usual window.

Inside a conditioning bin or silo

The vessels themselves are deliberately simple. Traditional dry mills use slatted wooden bins or hoppers that let air move through the parchment, preventing the trapped heat and condensation that would encourage mold. Larger operations may use ventilated silos; smaller producers often simply rest the coffee in breathable bags — jute or grain-storage liners — stacked off the floor in a cool, dry bodega or warehouse. What matters is less the material than the conditions: airflow, a stable and moderate temperature, protection from direct sun, and ambient humidity low enough that the coffee neither reabsorbs water nor keeps drying out. A storage relative humidity in the region of 50 to 65 percent is a commonly cited comfort zone.

How long? The most frequently cited window is roughly 30 to 60 days, though practice varies widely and honestly. Some mills treat a minimum of about four weeks as adequate; others rest premium lots for eight to twelve weeks; and a few traditions stretch parchment storage considerably longer when the market allows. How conditioning differs from other coffee "rests"

Three different stages in coffee's life are all sometimes called "resting," and conflating them causes real confusion. Conditioning is specifically the between-drying-and-milling rest of parchment. Here is how it stands apart:

  • Conditioning (this stage). Dried parchment rests in bins or silos for weeks so that moisture equalizes and water activity settles before the parchment is removed. It happens at origin, at the dry mill.
  • Long-term green storage. This comes after hulling, once the coffee is naked green beans bagged for export or held in a roaster's warehouse.
