Field studies consistently show that bee visitation raises fruit set and yield: research in Panama found honeybees lifted arabica production by around 50 percent, and other studies place the pollinator contribution anywhere from roughly 10 to 50 percent depending on the site. Bees also tend to improve the uniformity and weight of the beans. Honeybees, stingless bees, and a wide range of wild bees all forage the blossoms, and — in a neat twist — coffee nectar contains low doses of caffeine that appear to sharpen bees' memory of the flower, encouraging them to return. From Blossom to Ripe Cherry: The Long Wait

Pollination is only the beginning. A fertilized flower sets a hard green cherry that then swells and matures slowly, changing color — usually from green to red, or to yellow or pink in some varieties — as it ripens. The wait from bloom to a picking-ready cherry is long, and it differs by species.
