Along the way it can pick up small stones, clods of dried mud, bits of metal, staples, nails, fragments of glass and other dense debris — hazards that hitch a ride from patios, hessian sacks, truck beds and warehouse floors. Some of this material is almost exactly the size, weight and colour of a coffee bean, which is precisely why it slips past a casual glance. Removing it is the quiet, unglamorous job of the dry mill, and the specific step that pulls out heavy foreign matter is called destoning.

Destoning produces nothing you will ever taste. Its entire purpose is to make sure that nothing you should not taste — and nothing that could shatter a burr set or crack a roaster drum — ever reaches the next stage. How a destoner works: gravity, vibration and airflow

A destoner — also described as a gravity separator or densimetric (specific-gravity) table — separates material by density rather than by size or colour. At its core is an inclined vibrating deck, usually a perforated or mesh surface, combined with a stream of air blown upward through it. As coffee is fed across the deck, the machine does two things at once: it shakes the bed of material and it pushes air up from below.

The upward airflow partially lifts and loosens the lighter beans so they behave almost like a fluid — a state often described as a fluidized bed. Within that stratified layer, the heaviest particles sink and stay in contact with the vibrating deck, while lighter beans effectively float on top. Because the deck is both tilted and vibrating, the two layers are then walked in different directions: the dense material — stones, metal, glass, dense clods — is conveyed toward one discharge, while the cleaned coffee migrates toward another. Adjusting the deck angle, the vibration frequency and the air volume lets an operator tune exactly where that split falls for a given lot.

The principle is the same one that lets a gold pan or a winnowing basket separate materials of different weight, mechanized and made continuous. It is worth stressing that this is a density operation: the machine does not "see" a stone as a stone. It simply drives whatever is significantly denser than a coffee bean toward the heavy outlet. Metal is frequently removed even earlier by dedicated magnets, but a well-set destoner will still capture non-magnetic dense debris that magnets miss.

Where destoning sits in the dry-mill flow

Once coffee has been dried, it enters the dry mill as either dried parchment (from washed and honey processing) or dried cherry (from naturals). The heart of the mill is a sequence of cleaning, hulling, grading and sorting stages that turn that raw dried material into clean, export-ready green coffee. The exact order varies from mill to mill and from machine to machine — some operations destone before final grading, others integrate it into a combined cleaning unit — so treat any single "step number" as a convention rather than a universal law. Destoning versus density grading and colour sorting

Because a destoner shares its gravity-table mechanism with density grading, the two are easy to conflate — but their goals are different. Destoning is distinct from density grading, which separates sound, dense beans from light or immature ones; in destoning, everything you want to keep is coffee and everything you are ejecting is not, whereas in grading both fractions are coffee sorted by quality. It is equally distinct from colour sorting, which uses optical sensors to eject beans that are the wrong colour — blacks, sours, insect-damaged or discoloured defects — regardless of their weight.

In practice these functions overlap and machines may combine them.
