Before a single bean is ever roasted, its fate has largely been decided in the field, at the wet mill, and on the drying bed. Every mistake made along that path leaves a physical mark on the seed: a bean turns black, sours from the inside, dries into a shrivelled husk, or never ripens at all. Graders call these marks defects, and learning to read them is one of the oldest and most exacting skills in the trade. A trained eye can look at a fistful of green beans and tell you, with surprising accuracy, how the crop was picked, fermented, and dried.

The Specialty Coffee Association (SCA) turned that eye into a repeatable method. Its green Arabica grading protocol sorts flaws into two tiers of severity, counts them in a fixed sample, and converts the tally into a single number that determines whether a coffee can be called specialty. This guide walks through that taxonomy from the top: what the defects are, how they are counted, where the thresholds sit, and how each flaw sabotages the cup. It is the plumbing beneath every quality claim in the world of coffee.

What are coffee defects?

A coffee defect is any bean, or any piece of foreign material, that deviates from a sound, whole, properly processed green seed. Some coffee defects are dramatic and obvious, like a jet-black bean or a stone. Others are subtle, like a bean that is a shade too pale or nicked at one edge. What unites them is that each one, in its own way, either tastes bad, roasts unevenly, or signals that something went wrong upstream.

Defects matter because coffee is graded and priced on soundness long before anyone tastes it. A lot riddled with sour beans and insect damage will never cup clean no matter how skilled the roaster, and a single rogue bean can taint an entire cup. The grading method exists to make that quality measurable and comparable across farms, mills, and continents rather than a matter of opinion. Primary defects: the Category 1 list

The SCA splits flaws into two categories by how much damage they do. Category 1, or primary, defects are the severe ones. They are so likely to ruin a cup that most of them count as a full defect on their own, and a specialty-grade coffee is allowed zero of them. The primary defects are:

  • Full black — a bean that is blackish throughout, usually from over-fermentation, dead or overripe cherries, or fruit that fell to the ground. It brings foul, fermenty, phenolic notes.
  • Full sour — a bean whose interior has turned yellow-brown or reddish from microbial spoilage, typically over-fermentation, damaged fruit, or dirty processing water. It tastes sharply sour, vinegary, sometimes oniony (the classic "stinker").
  • Dried cherry / pod — a whole or partial dried cherry that escaped pulping or hulling, its papery fruit still clinging to the seed. It contributes dirty, moldy, fermenty flavors.
  • Fungus damaged — a bean showing yellow-to-brown fungal bloom, caused by mold taking hold during damp storage or uneven drying. It reads musty, moldy, and earthy.
  • Foreign matter — anything that is not coffee: sticks, stones, husk, metal. It carries no flavor of its own but is a hazard to grinders, machines, and teeth.
  • Severe insect damage — beans bored through by the coffee berry borer, with three or more clear holes. These can taste dirty, sour, or moldy where the tunnels have let rot in.

Secondary defects: the Category 2 list

Category 2, or secondary, defects are less harmful. They still degrade quality, but it takes several of them clustered together to equal the damage of one primary defect, so the protocol requires you to find multiples before they register. Specialty coffee tolerates a small number of them. The secondary defects are:

  • Partial black and partial sour — milder versions of their Category 1 cousins, where less than half the bean is affected.
  • Floater — a faded, low-density bean that floats in water, the mark of improper drying or storage; it cups flat and hay-like.
  • Immature / unripe — a green, concave bean with silverskin stuck fast, picked before it ripened. It is astringent and grassy, and it is the raw material of quakers.
  • Withered — a wrinkled, shrivelled bean caused by drought or water stress during development; grassy, straw-like.
  • Shell — a genetic malformation where the bean splits into a hollow shell and a core; the two pieces roast at different rates and tend to scorch.
  • Broken / chipped / cut — mechanically damaged beans, usually from a mill set too aggressively; the exposed surfaces oxidize and roast unevenly.
  • Hull / husk — dried fragments of cherry or parchment left behind after milling; musty and woody.
  • Parchment (pergamino) — a bean still wearing its papery endocarp because hulling was incomplete; muted and papery.
  • Slight insect damage — beans with only one or two borer holes, a mild version of the primary defect.

How coffee defects are counted: full defect equivalents and the 350g sample

Here is where the method becomes precise. A grader weighs out a 350-gram sample of green coffee and hand-sorts it on a matte black tray under bright, full-spectrum light, pulling out every flawed bean and every scrap of foreign matter. Then the counting begins, and this is the step newcomers find counterintuitive: not every defective bean equals one defect. Instead, each type of flaw is converted into full defect equivalents according to a fixed ratio, because a single black bean does far more harm than a single chip.

For primary defects, most types are a one-for-one hit. For secondary defects, you must accumulate several before they add up. The table below shows the standard SCA equivalents.

A worked example makes it concrete. Say a 350-gram sample yields 6 partial black beans, 10 broken beans, and 5 immature beans. That converts to 6 ÷ 3 = 2 full defects, 10 ÷ 5 = 2 full defects, and 5 ÷ 5 = 1 full defect, for a total of 5 full defects, all secondary. That coffee is still in the running for the top grade. But drop a single full black bean into the same tray and the lot fails on the spot, because one primary defect is one too many at the specialty level.

Specialty Grade and the grading ladder

Once the sample is converted into full defect equivalents, the number maps onto a grade. The threshold everyone cares about is the top one. To reach Specialty Grade (Grade 1), a coffee must have no Category 1 (primary) defects, no more than 5 full defects in total, and zero quakers in the roasted sample. Its moisture should sit in the accepted band (commonly cited as 10–12%), and it must show at least one distinctive attribute in aroma, flavor, acidity, or body. Below that, the ladder descends: Premium (Grade 2) permits up to 8 full defects and a few quakers, Exchange (Grade 3) allows more still, and the lowest grades tolerate dozens.

Two honest caveats. First, these defect counts are the physical half of quality; the cup score from sensory evaluation is the other half, and the SCA has been transitioning its scoring toward a newer framework called the Coffee Value Assessment, though the green-grading defect count remains widely used. Second, "specialty" is a defined bar here, not a marketing adjective, which is exactly why it gets stretched loosely on packaging. Quakers: the defect you only see after roasting

Almost every defect above is visible in the green bean. Quakers are the great exception. A quaker is an underdeveloped, typically unripe bean that fails to brown during roasting because it lacks the sugars and proteins needed for the Maillard browning reactions. In the green state it may look ordinary, or only slightly pale; it is only after the roast that it betrays itself, staying stubbornly pale, khaki, or blond amid a tray of evenly browned beans.

That makes quakers a roast-visible defect, and the grading protocol treats them separately: they are checked in a 100-gram roasted sample, and Specialty Grade permits none. Their flavor is why. A quaker tastes of raw peanut or peanut skin, cardboard, and straw, and because it is diluted across a whole brew it introduces a papery flatness that muddies otherwise clean coffee. Washed processing helps, because the flotation step tends to carry low-density unripe beans away, whereas natural processing leaves more of them behind for post-roast sorting.

Where coffee defects come from — and how they taste

Nearly every defect traces back to one of three moments: how the cherries were picked, how they were processed, and how they were dried. Understanding the chain is what lets a roaster or buyer diagnose a lot rather than just reject it.

Picking ripeness

Strip-picking a branch all at once, rather than selectively picking only the red-ripe cherries, sweeps up unripe green cherries and overripe or dead ones in the same pass. The unripe fruit becomes immature beans and quakers; the overripe and fallen fruit becomes black and sour beans. Processing and fermentation

At the mill, defects are born from time and cleanliness. Delays between picking and depulping, fermentation run too long, dirty tanks, or contaminated water all invite the microbes that produce sour and black beans, with their acetic, vinegary, and fermenty signatures. Aggressive mechanical pulping or hulling, meanwhile, generates the broken, chipped, and cut beans. Drying and storage

Drying is where fungus damage, floaters, and mold-driven musty flavors take hold. Pulling the taste threads together: over-fermentation and rot give you fermenty and sour (full and partial black, full and partial sour); the most extreme spoilage crosses into phenolic, a harsh medicinal or chemical edge; mold and lingering fruit fragments read musty and moldy (fungus damage, hull, husk, dried cherry); and underripe or moisture-stressed beans turn astringent, grassy, and papery (immature, withered, and the quakers they become).
