The ouro verde coffee variety is a compact, high-yielding Brazilian arabica cultivar bred at the Instituto Agronômico (IAC) in Campinas, São Paulo, for dense planting and machine-friendly farms. Its full name is IAC Ouro Verde, and it is also written Ouro Verde IAC H 5010-5. The name translates as "green gold," a nod to coffee's weight in Brazilian agriculture rather than to anything about the bean itself.
What makes it worth understanding is not a flavour claim and not a disease gene. It is the shape of the plant. Ouro Verde was built to be short and thickly branched so that growers can put more trees in the ground per unit of land and run a harvester down the row, and it was built to do that without losing the toughness that short cultivars had historically given up.
What the ouro verde coffee variety is, in one paragraph
Ouro Verde is a red-fruited, short-statured Coffea arabica cultivar with short internodes, heavy secondary branching and very dense foliage. It ripens medium to late. Its breeders record it as susceptible to leaf rust, to nematodes and to brown eye spot. Its cup quality is described by those same breeders as similar to Catuaí. It was evaluated in, and is indicated for, the main arabica areas of São Paulo and Minas Gerais. And it exists because Brazilian breeders wanted Catuaí's small frame carried on a more vigorous, harder-wearing plant.
That last point is the whole design brief, and everything else on this page follows from it.
Where Ouro Verde came from
The pedigree here is unusually well documented, which is not always the case with Brazilian cultivars. IAC's own technical bulletin on the cultivar records a controlled cross made at Campinas in 1961 between a Catuaí Amarelo tree (coded IAC H2077-2-12-70) and a tree of the Mundo Novo cultivar (IAC 515-20). The hybrid was designated H5010. Some secondary write-ups describe the origin as a natural cross; the institute that made it describes a deliberate hybridisation, and that is the account to prefer.
The stated goal was blunt: take the low stature and compact canopy of Catuaí and put more vigour and hardiness behind it, because Catuaí Vermelho — then and now one of the most widely planted cultivars in the country — was reliable but not especially rugged. Mundo Novo supplied the vigour. Catuaí supplied the dwarfing.
Selection then ran by the pedigree method through six generations, with each step traceable in the line code: H5010-5, then H5010-5-26, then H5010-5-26-2, and so on to F6. One detail from that process is genuinely illuminating. The most productive F1 plant, H5010-5, turned out to be heterozygous for two visible genes: caturra (governing the compact habit) and xanthocarpa (governing fruit colour). That plant carried orange fruit and short stature. In the following generation, grown at IAC's Santa Elisa experimental centre in Campinas, breeders selected trees that were homozygous for red fruit and homozygous for the short, compact form — which is why the finished cultivar is uniformly red-fruited and uniformly small, rather than segregating into tall and short siblings across the block.
Sources differ on the release date
This is the one place to be careful. Ouro Verde is commonly reported as having been launched by IAC in 2000, and a sensory study that compared it with Tupi and Obatã was published in 2001, which is consistent with that timing. IAC's own bulletin, however, gives a different set of dates: entry in Brazil's National Register of Cultivars on 10 December 2012, and formal plant-variety protection in November 2014. Those are different administrative steps, and secondary sources routinely quote one without the other. "Launched around 2000, formally registered in 2012" is the honest summary; picking a single year is what produces the contradictory dates you will see quoted elsewhere.
The one thing it was bred for: plant architecture
Brazil is where mechanised coffee harvesting became normal at scale, and plant size is the constraint that decides whether mechanisation works at all. A tall, open, widely spaced tree wastes ground and forces the machinery to be built around it. A short, dense, cylindrical tree lets a grower tighten the spacing within the row, keep the row itself wide enough for a straddle harvester to pass, and get more producing trees onto the same block.
Dense-planting systems can carry several times the tree population of traditional spacing, with row width set by the machinery rather than by the plant. That trade only pays off if the cultivar stays small and does not shade itself into unproductive wood — and if it can stand the competition that comes with crowding.
This is why Caturra and Catuaí did not end the story. Both are compact, but growers wanted compactness plus stamina: a plant that could take dense spacing, a rainfed season and repeated machine passes without collapsing in vigour. Ouro Verde was one answer. IAPAR 59, developed on a separate track in Paraná, was another, arriving at a similar plant shape from a completely different breeding logic.
What "compact" actually means on this plant
"Brazilian dwarf coffee variety" is a label that hides more than it reveals, so here are the concrete figures IAC published for this Ouro Verde arabica from an eight-year-old trial at Garça, São Paulo.
- Tree height: around 192 cm at eight years, against roughly 185 cm for the Catuaí Vermelho IAC 81 control in the same trial.
- Canopy diameter: around 202 cm, against roughly 184 cm for the same control.
- Internodes: short, with abundant secondary branching and very intense foliage.
- Form: cylindrical, the classic Catuaí silhouette.
- Leaves: young leaves green or bronze, mature leaves glossy dark green, oval in shape.
Read those figures carefully, because they contain a surprise. Ouro Verde is a dwarf that came out slightly larger than the Catuaí it was meant to match — taller in that trial, and noticeably wider in the canopy. IAC attributes the extra height and vigour directly to the Mundo Novo side of the cross. So the cultivar is not a smaller Catuaí. It is a Catuaí-shaped plant with more mass in it.
The formal descriptor table in the same bulletin says the quiet part out loud. It grades plant height as medium, using Catuaí as the reference, ranging up towards tall, using Acaiá as the reference. It grades internode length as medium against Catuaí, while the narrative text on the previous page calls the internodes short. Both readings are defensible, because varietal descriptors are comparative statements about named reference cultivars rather than measurements against a ruler. It is a useful habit to check which reference a descriptor sheet is grading against before treating any of its words as absolute.
The practical consequence is simple: Ouro Verde suits dense planting, but a grower cannot copy a Catuaí spacing sheet unchanged and expect the same canopy closure.
Fruit, bean and the harvest window
Ripe fruit is red and oblong, graded between medium and wide on IAC's descriptor scale. Under conditions at Campinas, the main flowerings fall between September and November, with fruit reaching full maturity in the May to June window — an average of roughly 225 days from anthesis to full ripeness. The descriptor sheet places ripening between medium and late, which matters for anyone sequencing blocks so that harvest does not all land in the same fortnight.
On the bean side, average sieve size is reported close to 16.5, with flat beans making up around 95 percent of the sample: a large, uniform, low-peaberry bean that suits mechanical drying, hulling and sorting. Bean length is graded between short and medium, bean width as wide. IAC estimates Bourbon's contribution to the cultivar's genome at around 62.5 percent, which is unsurprising given that both parents trace back through the Bourbon side of arabica's cultivated lineage.
Cup quality is where secondary sources tend to over-claim. IAC's descriptor table simply says quality is similar to Catuaí. The 2001 sensory comparison reproduced in the bulletin is a small panel scoring several attributes on a ten-point scale, and the differences from a Catuaí Vermelho IAC 81 control are narrow: Ouro Verde scored marginally higher for fragrance, aroma and overall quality, and marginally lower for flavour and aftertaste, with the institute's text noting low fruit acidity. Treat that as one panel, one season, one pair of samples. It supports "a respectable, commercially useful cup, in the Catuaí family." It does not support "a distinctive origin-character cultivar," and anyone selling it as one is going past the evidence.
Rust and nematodes: what Ouro Verde does not do
A number of variety listings credit Ouro Verde with rust or nematode tolerance. IAC's own bulletin does not. Its descriptor table records the cultivar as susceptible to leaf rust (Hemileia vastatrix), susceptible to nematodes and susceptible to brown eye spot, and the text notes that control measures may be needed for rust, phoma, brown eye spot, leaf miner and coffee berry borer.
That is worth stating plainly, because it defines the cultivar's place. Ouro Verde is not a disease-resistance variety. Both its parents sit on the traditional arabica side of the family, with no Timor Hybrid ancestry, so the question of rust-resistance genes does not arise here at all — and where such resistance does exist in other cultivars, it has repeatedly proven breakable as new rust races appear, so it is never permanent in any case. Ouro Verde competes on plant shape, vigour and yield, and expects the grower to manage disease by other means.

Where the vigour actually shows up
The most interesting line in IAC's data is not a plant measurement. It is the split between irrigated and rainfed sites. In the institute's published trials, mean yields under irrigation at Gália, São Paulo, were close to level between Ouro Verde and its Catuaí Vermelho control. In rainfed trials at several sites, Ouro Verde came out ahead of its controls, sometimes by a wide relative margin.

These are trial means from particular sites and particular runs of harvests, not a promise about any given block, and the number of harvests behind each figure varies from two to nine. But the pattern is consistent and it tells you something real: the extra vigour Mundo Novo contributed matters most when water is the limiting factor, and least when it is not. Where irrigation removes the stress, a well-managed Catuaí keeps pace. Where the season has to be taken as it comes, the tougher plant pulls away. That is exactly what a breeder crossing for hardiness would hope to see, and it is more useful to a grower than any single headline yield number.
How Ouro Verde compares to its nearest relatives
Against Catuaí. This is the comparison the cultivar was designed around. Both are compact and cylindrical, both are red-fruited in their red forms, and IAC rates their cup quality as similar. The differences are size and stamina: Ouro Verde runs slightly taller and distinctly wider in the canopy, and outproduced Catuaí controls in rainfed trials while matching them under irrigation.
Against Mundo Novo. Mundo Novo is the vigour parent, and it is tall. It was the workhorse of Brazilian arabica before dwarf types took over, and its height is exactly what mechanisation and dense planting made awkward. Ouro Verde keeps a meaningful share of that vigour in a frame short enough to work in a modern block.
Against IAPAR 59. Both are compact Brazilian cultivars aimed at intensive systems, but they were bred by different institutes for different primary traits, and their disease profiles are not comparable: IAPAR 59 descends from the Timor Hybrid line and was selected with rust in mind, while Ouro Verde carries no such ancestry and is recorded as susceptible. Where rust pressure is the deciding constraint, the two are not interchangeable.
The bottom line
Ouro Verde is a clean example of breeding for a farming system rather than for a cup note. Its short internodes, dense branching and compact cylindrical canopy exist to make dense planting and mechanical harvesting work, and its Mundo Novo ancestry exists to stop that compactness from robbing the plant of its stamina. It carries no rust resistance and no nematode resistance, and it makes no claim to an unusual flavour signature. IAC maintains the living reference sample and produces the genetic seed, which is why the pedigree can be quoted this precisely at all.
For anyone reading variety sheets, the habit Ouro Verde teaches is to ask what a cultivar was actually selected for, and against which reference it was graded. Here, the answer to the first question is written into the shape of the tree, and the answer to the second is written into a descriptor table that contradicts its own narrative unless you know how to read it.
