Understanding how those cherries come to be means following the plant across years, not weeks. Coffee is a patient, slow-return crop: it spends months in a nursery, several years reaching for a first real harvest, and then a couple of decades in steady production before it is renewed or replaced. Everything that follows — nursery, field, pruning shears — is one long attempt to give these bushes the conditions they evolved for, at a scale that can feed the world's cups.

From seed to seedling: the nursery and the “soldier” stage

Coffee is almost always started from seed rather than cuttings. Growers select plump, healthy seeds — often still in their parchment — and sow them in shaded germination beds of sand or fine soil. Roughly four to eight weeks later, the seed germinates in a way that gives the stage its nickname. The hypocotyl (the stem beneath the seed leaves) arches up and pushes the seed above the soil, still capped by its parchment husk, so the sprout looks like a tiny soldier standing at attention under a helmet. Growers across Latin America call this the soldadito, or “little soldier,” stage. When the husk drops away, the first two seed leaves unfold and the seedling begins to grow in earnest.

Young plants are then pricked out into polybags — black polyethylene sleeves filled with rich soil — and raised in a nursery under shade cloth or leafy cover that filters the harsh sun. They stay there for roughly six to twelve months, watered regularly and hardened off gradually before facing the field. A seedling ready to transplant typically stands a foot or so tall with several pairs of true leaves and a root system at least as long as its top growth. This phase is unglamorous but decisive: a weak or root-bound seedling rarely becomes a strong tree.

From there, the wait is measured in years. Coffee is fussy about where it lives. Arabica generally thrives higher up, roughly 900 to 2,000 meters and beyond, where cooler nights slow maturation and, many argue, concentrate sweetness and acidity; robusta tolerates hotter, lower ground. Shade or sun, spacing, and keeping trees productive

A key design choice is whether to grow coffee under a canopy of taller trees or in open full sun. Traditional shade-grown systems mimic the forest understory where wild arabica evolved, buffering temperature, supporting birds and soil life, and often slowing ripening; full-sun systems, developed for higher yields, expose densely planted rows to direct light but demand more inputs and can be harder on the land. Spacing follows from that choice. Growers plant anywhere from a couple of thousand to many thousands of trees per hectare, balancing sunlight, airflow, disease pressure, and how much hand labor the harvest demands. Once established, trees are managed for the long haul:

  • Pruning shapes the bush, removes exhausted wood, and keeps fruiting branches within reach of pickers while encouraging fresh, productive growth.
  • Stumping is the dramatic renewal option — cutting an aging trunk back to a low stump so it regrows vigorous new stems. The plot yields nothing for a year or two, but the rejuvenated tree can far out-produce a tired old one.
  • Fertilization replaces the nutrients a heavy crop pulls from the soil, whether through compost, mulch, or mineral inputs.
  • Weed, pest, and disease control protects the investment. Coffee faces serious threats from leaf rust, coffee berry borer, nematodes, and more — an ongoing battlefront on nearly every farm.

Water is the last piece. Most of the world's coffee is rain-fed, timed to natural wet seasons, but farms in drier zones or seeking more control increasingly turn to irrigation — which can also be used to manage flowering.

The annual rhythm: flowering, ripening, and selective harvest

Each year the farm follows the weather. After a dry spell, the first significant rains trigger flowering: the bushes burst into fragrant, jasmine-scented white blossoms, sometimes overnight and often in more than one wave. Coffee is not grown the same way everywhere. A large share of the world's crop comes from smallholders — families working modest plots, often a few hectares or less, who together grow the majority of the world's coffee. At the other end sit large estates and cooperatives with pooled resources, mechanization where the land allows, and the scale to invest in processing and quality control. What every grower shares is how demanding the work is.
