Coffee is regularly ranked among the most volatile of all the world's "soft" commodities — capable of nearly doubling in a year and giving much of it back in the next. A single cold night in one country can move the global benchmark by double digits before breakfast, while a generous harvest can quietly bleed a third of the value away over a season.

The C-price and London Robusta: coffee's two benchmarks
Almost every coffee contract on earth is priced off one of two numbers. The first is the Arabica "C" contract — the "C-price" — traded on the ICE Futures U.S. exchange in New York under the ticker KC. Each contract covers 37,500 pounds of washed Arabica green coffee and is quoted in US cents per pound. The second is the Robusta contract, traded in London on ICE Futures Europe and quoted in US dollars per metric tonne. Arabica is the higher-grown, more delicate species that dominates specialty; Robusta is hardier, cheaper, and heavy in instant coffee and espresso blends.
These futures aren't just bets — they are the reference price for physical coffee worldwide. A washed Colombian or an Ethiopian lot is usually sold as "the C plus (or minus) a differential." Brazil's weather: coffee's biggest price lever
If you want to read coffee's mood, watch Brazil. It grows roughly a third of the world's coffee and is by far the largest exporter, so its weather is the single most powerful force in the market. When something goes wrong in Brazil, it goes wrong for everyone.
The clearest example is frost. Arabica is a tropical plant with no tolerance for freezing; a hard frost scorches leaves and can kill young trees outright. In late July 2021, one of the most severe frosts in two decades swept Brazil's coffee belt — and because it landed on trees already stressed by a punishing drought earlier that year, the damage compounded. Analysts estimated the frost cut as much as a fifth from the following season's Arabica crop, and the C-price surged in its wake, roughly doubling from early-2021 levels to a decade high by early 2022. Drought does slower but equally serious harm: the prolonged dry spells that hit Minas Gerais, Brazil's coffee heartland, in 2024 and 2025 stunted cherry development and helped drive the C-price to record highs in early 2025. Disease can act as its own supply shock, too — the coffee leaf rust epidemic (Hemileia vastatrix, or la roya) that ravaged Central America in 2012–2013 hollowed out harvests for years.
The flip side matters just as much. When Brazil delivers a big, healthy crop, the world suddenly has more coffee than it can drink, and prices can fall as fast as they rose. This asymmetry — soaring on scarcity, sinking on plenty — is the heartbeat of coffee price volatility.
What else drives coffee price volatility
Weather sets the mood, but several structural forces amplify every move. None of them acts alone; they stack, and sometimes they collide.
The biennial on-year/off-year cycle
Coffee trees, like many fruiting plants, bear on a roughly two-year rhythm. A heavy "on-year," when the tree pours its energy into a big crop, is naturally followed by a lighter "off-year" as it recovers. In Brazil this cycle is large enough to swing national Arabica output by low double-digit percentages from one season to the next, even in perfect weather. That built-in sawtooth means supply is never flat — the market is always adjusting to a crop that is structurally bigger or smaller than the year before.
The Brazilian real
The C-price is quoted in US dollars, but Brazil's growers earn and spend in reais — so the exchange rate is a price driver in its own right. When the real weakens against the dollar, every dollar of coffee converts into more reais, so Brazilian farmers are eager to sell and even accelerate exports; that extra supply tends to push the dollar C-price down. When the real strengthens, growers receive fewer reais per dollar, hold back their beans, and the tighter selling supports higher dollar prices. The result is a well-documented positive correlation between the real and the C — a currency move on one side of the world can shift what a farmer on the other side is paid.
Speculation and fund positioning
Far more coffee is traded on paper than is ever roasted. Commodity funds and other speculators take large "net-long" (betting on higher prices) or "net-short" positions in KC futures, and when they pile in or rush out together, the moves get exaggerated. Thin liquidity makes it worse: when exchanges raise the cash "margin" traders must post, some funds simply close out, and the market can lurch one way with few buyers or sellers to cushion it. Speculators don't invent coffee's fundamentals, but they routinely magnify and accelerate the swings those fundamentals create.
The long supply lag
Most markets self-correct: high prices invite new supply, which cools prices. Coffee can't do this quickly. A newly planted coffee tree takes three to four years to bear its first meaningful cherries and five to seven years to reach full production — then keeps producing for decades. So when prices spike, farmers can't flip a switch to grow more this year; and when prices collapse, the trees planted during the last boom keep bearing anyway. This lag is why coffee runs in long boom-and-bust cycles: today's high prices plant the seeds of tomorrow's glut, and today's low prices sow the next shortage.
The human cost of a whipsawing market
For traders, volatility is opportunity. For the roughly 12.5 million farms — most of them smallholdings — that grow the world's coffee, it is a source of chronic insecurity. Income that can halve from one harvest to the next makes it nearly impossible to plan: to budget for school fees, to hire pickers, or to invest in the fertilizer, renovation, and processing that keep a farm productive. Uncertainty itself is a tax. Even when prices are decent, the fear that they will crash next year discourages the long-term investment that coffee quality depends on.
Worse, the swings regularly drive the market below what it actually costs to grow the crop. In 2018 the C-price fell below US$1.00 per pound — its lowest in more than a decade — and by mid-2019 nearby futures had touched roughly US$0.90, beneath the cost of production for a great many farmers and low enough that the World Coffee Producers Forum demanded emergency action. No one can stop coffee prices from moving, but the trade has built a toolkit to blunt the impact. Most of these tools work the same way: they trade away some potential upside in exchange for certainty.

The best-known safety net is the Fairtrade Minimum Price, which for washed Arabica was raised to US$1.80 per pound in August 2023 (up from US$1.40), on top of a separate community premium — a deliberate floor meant to keep the deepest crashes from wiping farmers out.
