Caturra Chiroso is one of Colombia's most talked-about specialty varieties, and the most striking thing about it is that the name is almost certainly wrong. Despite the label, genetic work reported in recent years indicates it is probably not a Caturra at all, and probably not a member of the Bourbon-Typica family that Caturra belongs to. The plant looked like one thing in the field, farmers named it accordingly, and the specialty trade adopted that name years before anyone tested it.

Why the name "caturra chiroso" stuck

The variety is associated above all with Urrao, a cool, remote municipality in southwest Antioquia, Colombia. How it got there is told more than one way. One widely repeated account has a grower noticing odd plants inside an existing lot: short and compact like the Caturra around them, but carrying unusually long, narrow, tapered fruit and seed. Another, told by importers who work in the area, has a farmer bringing seed back to Urrao from a farm in the neighboring municipality of Betulia after seeing a lot that produced exceptionally well, with local propagation spreading it from there. Both stories circulate; neither is documented in a way that settles the matter.

What the name means is less disputed. "Chiroso" is rural Colombian slang for something drawn out or straggly, and it describes the seed. So the plant ended up with a two-part descriptive nickname: caturra for the compact bush, chiroso for the stretched-out bean.

That is a perfectly reasonable way for a farmer to name a plant. It is a terrible way to establish lineage. Compact stature in arabica is not the signature of one family; dwarfing turns up repeatedly across unrelated populations, which is exactly why a short bush in a field of short bushes reads as "one of these" to the eye. The real Caturra is a natural compact mutation of Bourbon selected in Brazil, and that page owns the dwarf-variety story in full. The contrast is the whole point here: Chiroso borrowed the name of a variety it does not appear to be related to.

Producers around Urrao go further and distinguish several field types under the umbrella, including red-cherry and yellow-cherry forms with visibly different leaf shape. The names "Chiroso," "Caturra Chiroso" and "Bourbon Chiroso" all circulate locally, and all three appear in the scientific literature as distinct accessions. Treat them as farm-level nomenclature that researchers have since adopted, not as a formal register of subvarieties.

What the genetic work actually reported

Two separate strands of evidence sit behind the reframing, and they are not equally strong. Keeping them apart is the difference between an honest claim and a marketing one.

The first, and the one that changed the trade's mind, is DNA fingerprinting attributed to RD2 Vision, a coffee genetics outfit that has fingerprinted a great many specialty accessions. Trade reporting and producer accounts describe that work as tying the Chiroso genotype to Ethiopian landrace material rather than to the cultivated Bourbon-Typica pool. That result is widely repeated and broadly accepted in specialty circles, but as far as the public record shows it has not been published as a full study with the underlying data available for scrutiny. It is best read as a reported cluster assignment, not a demonstrated pedigree.

The second strand is peer-reviewed and narrower. In 2024, Colombian researchers Chica-Acosta, Ibarra-Arcila and Martínez published complete chloroplast genome assemblies for three Urrao field types, Caturra Chiroso, Bourbon Chiroso and Chiroso, in the Journal of Plant Biochemistry and Biotechnology. All three assembled to the same length and gene content, two of them shared a distinguishing marker, and the phylogenetic reconstruction grouped the three together as a coherent set sitting close to Ethiopian-origin material and to the traditional cultivars. The authors present them as a distinct genetic resource worth conserving. What they do not do is hand anyone a parentage, and the reason is technical: the chloroplast genome is inherited maternally and varies very little across arabica, so it is good at showing that a group hangs together and poor at resolving which population it descends from.

So the defensible sentence is: Chiroso appears to sit outside the ordinary cultivated Bourbon-Typica material and is reported to associate with Ethiopian landrace stock. The indefensible sentences, both of which you will see printed on bags, are "Chiroso is a Geisha relative" and any statement naming a specific ancestor. Nobody has published a credible account of how Ethiopian-derived seed would have reached a remote valley in Antioquia either, and honest sources say so rather than filling the gap with a story.

This is also how the corrections keep surfacing. DNA fingerprinting of competition lots has become far more routine in the last few years: a coffee places well, someone finally tests it, and the label turns out to describe morphology rather than ancestry.

How the plant behaves in the field

Chiroso is a compact bush with short internodes and small, light-green leaves, which is the resemblance that started the naming problem in the first place. Growers in Urrao expanded it partly because it kept producing in the cold, cloud-influenced conditions high on the western flank of the Andes, where other material sulked. Elevations around Urrao are genuinely high for Colombia, commonly cited in the 1,800 to 2,100 meter band, and at that altitude cherry maturation is slow and the harvest window can be narrow. Slow maturation is the standard explanation offered for the cup, though that is a general effect of high-elevation growing rather than anything specific to this variety.

On yield, the public record contradicts itself, and that is worth flagging rather than smoothing over. Some importer and trade accounts describe Chiroso as unusually productive for its size, with heavy fruit set; the origin stories that have a farmer chasing seed from a high-producing lot point the same way. Other sources, including variety databases, list it flatly as low-yielding. Both statements circulate in credible-looking places. The likeliest explanation is that reported productivity is confounded with site, age of plantings, nutrition and how much attention the plant gets, but there is no published agronomic trial to settle it, so anyone quoting a yield figure for Chiroso is quoting an impression.

What is not in dispute: Chiroso is susceptible to coffee leaf rust, and sources also flag weakness to other common pressures rather than resistance to them. It is not a Castillo-type or Colombia-type selection and carries no claimed rust resistance. Anyone planting it at altitude is accepting a disease-management burden in exchange for cup character. That trade-off is the standard bargain with quality-first varieties, and pretending otherwise does producers no favors.

What it tastes like, in honest terms

The cup is why anybody bothered. Chiroso lots are consistently described as floral and tea-like, with jasmine or orange-blossom aromatics, a bright citric acidity that tasters often reach for bergamot or mandarin to describe, and sweetness running from peach and apricot into tropical territory depending on where it grew. Body tends to be light and silky rather than heavy. Comparisons to Geisha are constant, and they are comparisons of style, not evidence of relatedness.

Two caveats keep this honest. The profile is site-dependent: the same variety reads more stone-fruit in one valley and more lemongrass-herbal in another, which is exactly what you would expect from genetically diverse landrace-derived material rather than from a uniform clone. And a great deal of what people taste in a headline Chiroso lot is processing. Extended ferments, naturals and honeys are used heavily on this variety, and they amplify fruit and florals regardless of genetics. A washed Chiroso grown and picked carelessly is not a magic coffee.

Where it is actually planted

Urrao remains the heartland and the reference point. From there, plantings have spread to other high-altitude municipalities in Antioquia and, following demand, into other Colombian departments, with Huila-labeled Chiroso now appearing in the trade. Total plantings remain small relative to the workhorse varieties that carry the bulk of Colombian coffee, and there is no reliable public figure for planted area, so anyone quoting hectares is guessing.

It is worth noting where Chiroso did not come from: it was not released by a national breeding program. Urrao's relative isolation is often cited as part of the reason an unregistered oddity could be selected, multiplied and spread by growers themselves instead of being replaced by an institutionally recommended variety. Its rise to national attention is generally dated to Colombian competition cupping in the 2010s, with a 2014 Cup of Excellence result from an Urrao producer the most frequently repeated milestone. The date is repeated more often than it is sourced, so treat it as trade memory rather than as a verified record.

The Pink Bourbon parallel

Chiroso is not a one-off. The closest parallel is Pink Bourbon, a Colombian coffee named because growers found pink-blushed cherries among Bourbon plants and assumed a Bourbon cross. Testing has reportedly found it is not a Bourbon either and, like Chiroso, it is reported to associate with Ethiopian-derived material. Two names invented from what a plant looked like standing next to its neighbors, and the same correction arriving years later.

Put together, they teach the general rule: a field name records a resemblance, not a genome. Morphology is a weak identifier in arabica because the cultivated species carries little genetic diversity outside Ethiopia and repeatedly throws similar-looking plants from unrelated backgrounds. If the Ethiopian-association readings hold, both varieties belong in the broad conversation about heirloom and landrace coffee rather than in the tidy family tree of cultivated selections.

A variety name is not a quality grade

Because Chiroso arrived attached to competition results, the name now functions in the market as a promise. It should not. Variety sets a ceiling, not a floor. The same seed planted low, picked unripe and dried badly produces an ordinary cup; the elevation, the picking, the fermentation and the drying do most of the work you actually taste. A bag that says "Caturra Chiroso" and nothing else tells you less than a bag that names the municipality, the elevation, the harvest and the process.

There is a second, sharper problem. Because the name is desirable and no certification stands behind it, "Chiroso" on a label is an unverified claim in most cases. Fingerprinting of competition lots is starting to change that at the very top of the market, but for ordinary commercial lots the variety statement rests on the chain of trust between grower, mill and importer. That is not an accusation; it is simply how variety labeling works when no registry exists.

Caturra Chiroso is best understood as a Colombian selection from Urrao carrying an inherited, misleading name. The reported genetics place it with Ethiopian landrace material rather than with Caturra, which fits the intensely floral, tea-like cup far better than a Bourbon-descended dwarf ever did, but the ancestry has not been resolved to a parentage and the route from Ethiopia to Antioquia is genuinely unknown.
